Quick recipe: Old-style potato salad

US potatoes can rock your world in many ways. They can be consumed as great source of calories and carbohydrates and can even be used as extenders to meat in your favorite dishes or added ingredients to many other delicacies.

Preparing an awesome potato dish should not be tedious and difficult. You can simply slice US potatoes and throw them straight in the oven with salt and butter to have a quick-fix for snacks. Or you can try a simple recipe if you intend to make dinner at home extra special.

Here is a simple recipe using US potatoes that you can prepare without any hassle in as fast as 15 minutes. All ingredients are also readily available in the grocery (you might already have those in your kitchen).


Old-style potato salad recipe


• 8 medium-sized US potatoes

• 8 medium-sized US potatoes

• 1 ½ cups of real mayonnaise (can use the low-fat mayonnaise available in the market)

• 2 tablespoons of cider vinegar

• 2 tablespoons of white sugar

• 1 teaspoon of iodized salt

• 1 tablespoon of mustard

• 1 teaspoon of garlic powder

• ½ teaspoon of pepper

• 1 cup of minced onion

• Sliced celery

• 1 piece red or green bell pepper

• ½ cup of cooked sweet corn, drained (optional)



1. Peel and slice US potatoes into cubes.

2. Boil diced US potatoes in water with salt until tender. When done, drain water, set aside, and let cool in room temperature.

3. In a separate bowl, mix all other ingredients—mayonnaise, cider vinegar, salt, garlic powder, sugar, and mustard.

4. Add diced US potatoes into the bowl of mixture. Put in sliced/diced red or green bell pepper (along with sweet corn if you opt for it). Sprinkle with pepper and sliced celery.

5. Chill before serving. This recipe makes 8 servings and gets done in just 15 minutes. Estimated overall cost is about P150 to P200.

Old style potato salad has a good nutritional value. To begin with, US potatoes are already loaded with nutrients like Vitamin C, Vitamin B6, potassium, fiber, and iron, manganese, copper, phosphorus, pantothenic acid, and niacin, among many others.

With the addition of the ingredients to make the salad, the dish gets further packed with additional nutrients like Vitamin A, thiamin, riboflavin, folate, calcium, magnesium, potassium, sodium, zinc, and selenium.
